They are the roads that your parents told you not to walk down alone at night until you were all grown up.\u009d<\/p>\n\n\n\n<p>The Scotch Bonnet pepper can be dangerously deceptive, as its distinct aroma can lull you into lowering your guard, Ivey continues. Its prowess in deception lies in its ability to either tinge your tongue with sweetness or take traditional Caribbean flavours to heights matched only by the peaks in cock pit country, Jamaica where they are abundantly grown.<\/p>\n\n\n\n<p>Traditional curry goat and thick Caribbean soups are elevated with the Scotchie&#8217;s presence, and rice and peas is just rice and some peas\u009d without the tail of a scotch bonnet pepper peeking out from under a few rice grains. Photo credit GETTY<\/figcaption><\/figure>\n<\/div>\n\n\n<p>Jamaica is the biggest player in the regional market, with top agro-processors including <a href=\"https:\/\/gracefoods.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Grace<\/a>, Walkerswood, <a href=\"https:\/\/spurtreejamaica.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Spur Tree Spices<\/a> and Jamaica&#8217;s leading pepper sauce producer, <a href=\"https:\/\/grayspepper.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gray&#8217;s Pepper Products Limited<\/a>, with approximately 60 per cent of its products destined for the export market.<\/p>\n\n\n\n<p>Popular brands in the region include <a href=\"https:\/\/grayspepper.com\/our-products\/grays-hot-sauce\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gray&#8217;s hot sauce<\/a> out of Jamaica, <a href=\"http:\/\/www.baronfoodsltd.com\/details\/283\" target=\"_blank\" rel=\"noreferrer noopener\">Baron&#8217;s Blazing hot sauce<\/a> which is manufactured in St. Lucia and Grenada, <a href=\"https:\/\/www.amazon.com\/Matouks-Hot-Pepper-Sauce-Ounce\/dp\/B00JLZCO6I\/ref=pd_lpo_325_t_1\/139-3680297-0001953?_encoding=UTF8&amp;pd_rd_i=B00JLZCO6I&amp;pd_rd_r=800c30a9-4823-4680-a6e8-a0d6465054c4&amp;pd_rd_w=TI2dQ&amp;pd_rd_wg=Anltg&amp;pf_rd_p=7b36d496-f366-4631-94d3-61b87b52511b&amp;pf_rd_r=7Z3S8DQS47HGGYT999M7&amp;psc=1&amp;refRID=7Z3S8DQS47HGGYT999M7\" target=\"_blank\" rel=\"noreferrer noopener\">Matouk&#8217;s hot pepper sauce<\/a> of Trinidad &amp; Tobago, <a href=\"https:\/\/www.amazon.co.uk\/Windmill-Products-Pepper-Sauce-480ml\/dp\/B07FYWMMPV\" target=\"_blank\" rel=\"noreferrer noopener\">Windmill Products Hot Pepper Sauce<\/a> from Barbados and <a href=\"https:\/\/tomfooderykitchen.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">FIYAH sauces by Tomfoodery Kitchen &amp; Bar<\/a> in the Cayman Islands.<\/p>\n\n\n\n<p>Scotch Bonnet is in such high demand by both the Caribbean domestic and export markets that, at a 2018 meeting of the Jamaica Agro processors Association (JAPA), members complained of a lack of the famous pepper as a raw material for sauces. The supply at the time could only meet about 55 per cent of the demand for sauce production.<\/p>\n\n\n\n<p>Jamaican export sales of the incendiary condiment are reflective of the growing demand. Exports of hot pepper sauce totalled $4,453,019 in 2019. Between 2013 and 2017, the export of fresh hot peppers increased by 713 per cent and 302 per cent for semi-value added. (JAMPRO)<\/p>\n\n\n\n<p>Of all the value added products created from the pungent pepper, none are more popular than traditional Caribbean sauces and condiments, including the famous hot sauce or as it is known in the region, pepper sauce.<\/p>\n\n\n\n<p>According to regional trade and investment promotion agency, Caribbean Export, the market for Caribbean sauces and condiments is worth $1.49 billion, having grown in value by 16.8 percent between 2019 and 2020.<\/p>\n\n\n\n<p>Globally, the hot sauce market is projected to reach $ 5.9 billion by 2025, with a compound annual growth rate of 5.2 per cent (2020-2025). (<a href=\"https:\/\/www.imarcgroup.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Imarc group<\/a>)<\/p>\n\n\n\n<p><a href=\"https:\/\/dobusinessjamaica.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Jamaica Promotions Corporation (JAMPRO)<\/a>, a promotional agency for export and investment in Jamaica&#8217;s local and international private sector, is currently in dialogue with investors who are interested in growing the hot peppers on a large-scale on-island. It is also working with other government agencies through a Pepper Value Chain Task Force (managed by the <a href=\"https:\/\/www.bsj.org.jm\/\" target=\"_blank\" rel=\"noreferrer noopener\">Bureau of Standards Jamaica<\/a>) to identify goods made from the Scotch Bonnet pepper and a strategy to facilitate the production of these goods.<\/p>\n\n\n\n<p>With more investments into the sector, Jamaica will be able to meet the large demand that exists for the peppers in their natural state, as well as pepper mash which can be used to make sauces, seasonings and other products, says Diane Edwards, President of JAMPRO.<\/p>\n\n\n\n<p>The next step for Jamaica is to create more value-added products from Scotch Bonnet peppers.
